Recipe: Pasta Primavera

Hey guys!

I thought I'd share a recipe with y'all! Our anniversary was Monday and I wanted to cook something a little special! :)

I had this dinner at a friend's house and it was so good! I begged her for the recipe and I'm so glad I did!

This recipe does take a little time to cook, but it's soo good and you won't regret it when you're finished!





Ingredients:
1 lb fresh broccoli (I used frozen)
2 small zucchini
1/2 onion, diced
1 tsp. dry basil (didn't use)
1/2 tsp salt
1/4 cup olive oil
1 basket cherry tomatoes, halved
1/2 cup frozen green peas
2 tsp diced garlic
1/4 parsley, chopped
1/4 tsp black pepper
1/4 tsp red pepper
1 lb linguini noodles (I cooked the entire pound and it was waaaay toooo much!)
1/4 cup butter
3/4 cup heavy cream*
2/3 cup Parmesan*

*I doubled mine for extra Alfredo sauce!



The recipe doesn't call for any meats, but I added chicken for some protein!


I marinated about 6 pieces of chicken in the Italian dressing for an hour or two



I had some extra time so I went ahead and cut all the tomatoes, zucchini, onion, and parsley. When I get the dirty work done before hand, it things go pretty quickly. That's always a plus!




**TIP**
If you're not using your parsley right after chopping, cover with a damp paper towel to keep from drying out
After the chicken was finished marinating, I went ahead and started cooking it on a very low heat.
Don't forget to keep an eye on it while cooking everything else!

Go ahead and start boiling your noodles in one pot and your broccoli and zucchini in a pot.




Cook and drain the noodle
Cook the veggies until they are crisp tender, drain, then just set aside in a large bowl
Now, you're going to saute the garlic, onions, and tomatoes in oil for about  2 minutes.
This part smells soo good!
If you going to use the basil, add it now and cook for about 3 more minutes.
Now, stir in peas, parsley, salt, red pepper, black pepper, and cook for another minute.
I took the picture before I added the peas. haha!
After that's finished cooking, throw the sauteed mixture in the bowl with the broccoli and zucchini.
One final step!
You can use the same pan and add to melt the butter, then add in your heavy cream and cheese and cook over medium heat--stirring constantly until smooth.
Then you just add in your noodles and the vegetable mixture until its heated thoroughly! That's it!
I served it with garlic bread! Leroy loved it!

One Year Anniversary!

Today is Leroy's and my 1 year anniversary!

It's seriously CRAZY how fast it's went by! I know everyone says time goes by so fast, and I believed it to a certain extent...but wow!


I'm so happy to be married to that guy! He truly is so, so good to me (and I'll admit...I don't always deserve it). I feel like we really do balance each other out and make a good team. That's important, right? :)











Well, happy one year to us! And many, many more to go!
